Principle: You can make cookies out of basically anything if you have an egg or two and enough sugar. (Robert Hooke)
Unit recipe:
1 part WET
2 parts FAT
3 parts SWEET
4 parts DRY
+ other
Preheat oven. Creaming method. Proportions may be adjusted. Drop ~1 ounce of dough per cookie, two inches apart. Bake 8-15 minutes, ~325-375 F.
Examples:
Modified Toll House
1 egg
2 butter
3 brown sugar
4 bread flour, baking soda
+ chocolate chips, vanilla
*This recipe replaces all-purpose flour with bread flour, which will produce a denser, more stable cookie and extends the grace period before the cookies are overbaked. Because of the higher protein content, mixing beyond what’s necessary is discouraged to avoid toughening. I use an amount of chips equal to the amount of flour used. 375 F, 10 minutes.
Vegan Lemon (ABC bootleg)
1 cornstarch, water
2 canola
3 white sugar
4 all purpose flour
+ lemon zest, poppy seeds, salt
*The zest of one half to one lemon may be used per unit recipe, according to the baker. The lemon zest is to be added to the fat to draw the essential oils. The WET solution is a (1:4) ratio of cornstarch to water, and heated until a smooth gel is achieved. Leavening, namely baking soda, is omitted due to a liquid fat and the subsequent lack of air bubbles to expand. Salt is included because canola oil replaces salted butter. 375 F, 10 minutes.
Almond Coconut w/ Mint
1 egg
2 butter
3 brown, white sugar
4 ground almonds
+ dry coconut, almond extract, mint
*Because of the absence of gluten, these cookies will spread much more easily than those made with flour. To minimize this, it is recommended that the almonds are ground as finely as possible. Additional DRY of any kind may be added to stabilize the dough. A quarter cup of dried coconut is used per unit recipe, and is to be added before the dry ingredients. 350 F, 10 minutes. Do not brown.
Cocoa Honey Lavender
1 egg
2 butter
3 honey, brown sugar
4 flour
+ lavender, cocoa, vanilla
*Lavender is to be ground with some granulated sugar before being added to the dough. Though it may be tempting to add more, only a generous pinch is needed per unit recipe, as the fragrance is easily overwhelming. The batter will be quite thick due to the cocoa, the amount of which added is up to the baker. 350 F, 10 minutes. Cookies with cocoa tend to crack when baked. This is normal.
Oatmeal variant: compose standard recipe except for dry ingredients. Stir in enough flour to make a paste. Add any type of rolled oats, amount up to preference.
